Millets are alkalizing foods which helps in preventing chronic diseases. Kodo millet (Aarka), is an annual grain that is grown primarily in India. In-spite of cultivating Kodo millet for 1000's of years this millet is slowly dying out. Kodo is a gluten free and a vegan cereal. Kodo is grown mostly in a organic way and it is a farmer friendly crop which can sustain heavy drought and marginal soils.

Cooking - Soak for half hour in water and pressure cook it like rice. Rice can be replaced with millets in rice dish.
